Where Food Meets Scale: Inside the MTCC

At the Metro Toronto Convention Centre, food is part of the event, not just a service.

The venue operates a fully integrated, in-house culinary program led by Executive Chef Duff Lampard, enabling planners to work directly with the team to shape menus that reflect the event’s tone and purpose. That level of control matters, especially when food is meant to support the overall experience.

 

 

“I think the difference with the MTCC compared to other venues is that the MTCC has an Executive Chef, and so they’re not outsourcing catering to third-party companies,” says David Bridgeman, Head of Event Operations and Logistics for Swift and Sibos. “You can really tell the difference.”

Much of the program reflects Ontario’s agricultural landscape, with about 80 percent of food and beverages sourced locally through partnerships with regional farms and producers. The facility is both a 100km Foods partner and Feast On certified, and all wine and craft beer served at the MTCC come from local producers. 

The venue also operates a full in-house pastry shop led by Executive Pastry Chef Mia De Ala, allowing planners to develop customized desserts and specialty menu concepts.

Even smaller details, like on-site beehives supporting pollination and local sourcing initiatives, reflect a broader focus on building a food program that connects to the region.

For planners, that kind of integration changes how food functions within an event. It becomes something that can be designed, not just delivered.

MTCC spans 700,000 square feet of usable space across its North and South Buildings, with exhibit halls, ballrooms, and meeting spaces designed to support large, multi-layered events. What stands out isn’t just the size, but how everything connects, allowing conferences, exhibitions, and social events to operate simultaneously within the same environment.

Location plays a role as well. Situated in the heart of downtown Toronto and connected directly to Union Station and the PATH network, the venue sits within one of the city’s largest hotel clusters. Many hotels are directly connected or accessible through a short indoor walk, simplifying logistics for events with thousands of attendees.

 

 

Behind the scenes, each event is supported by a dedicated Event Manager who works with planners throughout the process, helping coordinate the many moving parts required for large-scale productions. That experience is reflected in the venue’s 99% customer satisfaction rating during the 2024–25 fiscal year.

Within that environment, the culinary program becomes part of a broader system designed to support complex events, not just at scale, but with a level of consistency and control that planners can rely on.
