Forest to Fork: Destination Vancouver’s Chic Celebration of Local Flavours

Destination Vancouver, sponsoring the Travel Classics Conference, set out to enchant a distinguished group of North American and International Media with an evening celebrating the city’s esteemed culinary landscape and breathtaking natural vistas. In a creative partnership, Wildfire Experiential and Events masterfully captured Vancouver’s dynamic urban food culture, presenting it amidst the city’s scenic beauty.

The event took place at UBC Farm, nestled in a 90-year-old coastal hemlock forest on the ancestral, unceded territory of the Musqueam people. This venue, a hub for teaching, research, and advancing a sustainable, food-secure future, epitomizes the field-to-fork ethos revered by Vancouver’s top dining establishments, making it the perfect backdrop for the culinary expedition.

Amidst a forest of poplar trees, the dining setup was thoughtfully designed to mirror the natural elegance of the setting. Dark wood harvest tables stood out against a backdrop of white and grey, with grey slate chargers adding texture and contrast to the stunning tablescapes adorned with seasonal florals and foliage.

 

 

The evening began with a guided tour of UBC Farm, which showcased the seasonal produce and herbs that would later feature in the dinner.

 

Seated under the stars within the forest, guests enjoyed a four-course meal that celebrated Vancouver’s cultural diversity. The culinary journey spanned Indigenous-inspired charcuterie boards from Tawnshi, an Afghan-themed appetizer and main course by Chef Kevin Emery of Zarak, and dessert by Chef Betty Hung from Beaucoup Bakery.
