Toque Catering Takes Gourmet Into the Wild.

The wedding was in the making for over a year. The bride asked for a 100-person long table dinner in the middle of the Cowichan Lake Wilderness Forest with harvest tables running alongside the river. To do this the Toque team literally took over a bridge that bled into the forest flats with the  Cowichan Lake river flowing in the background.

Upon arrival, guests headed to the custom-made 16’long cedar bar where they were offered him and her Signature Drinks-Gin and Tonics for him and Modern Campari and Soda for her.

An array of canapes, as well as a 6’ long charcuterie board with pickled vegetables, crackers, and dips, kept guests busy until the bride and groom arrived.

Shortly after dusk, guests were guided over the quaint forest bridge as candles and tree stumps lit the path to dinner. Tables were covered in hundreds of twinkling lights, adding to the fairy tale scene.

Dinner was served family-style and began with

Course #1; a Baby Beet, Compressed Apple, and Goat Cheese Salad (below). 

Course #2 followed with a Summer Peach Brined Halibut and a Spiced Corn and Chanterelle Ravioli.

Course#3 was Chimichurri Marinated Flank Steak with Slate Platters of Pickled and Grilled Vegetables.

Dessert, also served family-style consisted of Cheesecake Stuffed Strawberries, Liquid Chocolate Balls, and  Pastels de Nata.

A late-night chef manned Mac & Cheese and Mini Slider Station gave needed fuel to those guests just getting their second wind.

This event was a feat of artistry and science as the team at Toque was virtually in the middle of the forest cooking a 100-person plated dinner using a gas stove and 6′ tables with a tent to cover them. Logistics were intense and everything had to be thought of in advance, there was no running back for more cooking tools or ingredients. Although complex, this is common for Toque which specializes in catering events in challenging and unique locations.
